Abstract

This study is based on two Roman cities in Switzerland. Former archaeological and archaeozoological investigations in Augusta Raurica make it possible to highlight an elaborated system according to the management of meat production and other animal resources. Aventicum is a work in progress, but the first results show a similar organisation to that of Augusta Raurica. The two archaeozoological studies that are on-going in Avenches are complementary. The first concerns the meat management in the profane quarters, the second in the religious contexts. Consequentially we conclude two different and independent modes of meat management. Immolation and ritual meals are specific to the religious world, but can we elucidate a profane meat management outside the sanctuaries? Therefore our studies will help to better understand the meat production and distribution within both areas of the city.
